Everyone loves a good brownie unless you're an alien who developed a hate relationship with chocolate and, logically, the rest of the world. We wouldn't know what to do on a gloomy day if it wasn't for these brownies to cheer us up. Sometimes a brownie says more than a thousand words and speaks when silence becomes overwhelming. Fear no more, these ones will save you from all evil in the world. Let's call them Peter Parker brownies. They're equally as hot when fresh out of the oven.

BAKING TIME: 25 minutes // SERVINGS: makes 9 brownies // MEAL: SNACK

- 1 cup spelt flour
- 1/2 cup cane sugar
- 1tsp baking powder
- 1tsp baking soda
- 2tbsp cacao powder
- 1 cup almond milk
- 1tbsp apple cider vinegar or lemon juice
- 1tbsp chia seeds mixed with 3tbsp water
- 1/4 cup coconut oil, melted
- 1tbsp almonds
- 1tbsp chocolate chunks

1. Preheat your oven to 180°C or 356°F. In a bowl, mix together the dry ingredients. These are: flour, sugar, baking powder, soda and cacao powder. In another bowl mix the almond milk with apple cider vinegar, coconut oil and chia seed mixture.
2. Add the wet mixture to the dry and combine thoroughly.
3. Chop the almonds and chocolate chunks into smaller pieces and add to the batter. Stir well.
4. Pour the brownie batter into a square oven dish covered with baking paper.
5. Bake for 25 minutes, then leave to cool down before devouring the whole batch.
